I probably have 20 sushi cookbooks, use them when I teach private sushi classes. This is a great book for any beginner, and really shows good techniques. I do not care for ring bound books but this one is fine. Good book for someone wanting to learn sushi, and no, not just rolls but how to cut fish, make rice (very important). I recommend.

I built and operated a sushi bar for 13 years, but I wasn't the chef - I was fortunate to find one of the finest people I've ever worked with in my life, a Japan-trained guy born there, but with 30 years experience in the USA after immigrating. We have had regular customers who would, literally, drive 50 miles each way for his sushi mastery (we're in a fairly rural area; people are regularly stunned to find this in such a remote location) and excellent reviews.All this is prelude to the fact that I know, love and appreciate great sushi prepared by a dedicated master of the craft. Out of respect for his training, secrets and time, I never in all that time asked my chef for any training, but I closely observed him on a number of occasions and picked up techniques, tricks and tips that way. Now that I'm back to working from home after selling the restaurant, I felt the pull of daily sushi and determined to teach myself at least the basics so I could make a few things for myself while still visiting my old chef as a customer instead of a boss.This book is "the book" as far as I'm concerned, head and shoulders above the other dozen or so that I own. The reason I mentioned all that stuff above is that I can confirm that techniques, ingredients and tips I saw being used by a master with decades of experience, starting in Japan, are in this book. A few things are missing (mostly items you may never see for sale in a sushi bar, but at home or for restaurant staff meals, like onigiri) but it's very, very complete and incredibly well illustrated with beautiful photography.If you want to learn the basics, get this book. You can learn more from a skilled chef hands-on after studying it and trying its methods, but you may never need to buy another book (well, maybe this one, incredibly fun to read even if you never make a thing: Sushi For Parties: Maki-Zushi and Nigiri-Zushi). And please, if you get serious about making sushi at home, do yourself a favor - save up and spend at least $100-200 on a quality 8-10" yanagiba knife (and eventually learn how to properly sharpen it on 1000/6000 water stones) and at least $80 (or more, depending on size) on a real Japanese Cypress hangiri - both available here at Amazon and other online stores. Good results start with good tools that will last longer than you will; these are specialty tools just for sushi/sashimi and they make a difference as you grow into them.This is an easy, wholehearted 5-star rating from me.

Speaking as a Chef and always seeking to become better and ALWAYS remaining a student. To say I was Amazed on how well this book was done would not do it justice. Every aspect of this book is so well thought out and done; that Includes the contruction and binding. Other than going to Japan to learn these skills; I don't think there is amuch better way to get your Sushi start! From Home Cook to Chef you WILL learn a lot from these Holy pages! A personal thank you so much for it's creation!

detailed, very nice step by step guides with picture, talks about from fish to plate, utensils etc. absolutely nothing is missing. this books is complete guide from fish to sushi/sashimi. also don't judge a book by cover :) I was not impressed by cover but inside is a gold mine.!

If you have never made sushi, this is a great beginner's guide. Shoot, it's great even if you have made sushi before. It's very informative and easy to follow. Lot's of picture instructions!

I've been making my own sushi for several years. Mostly I just try to mimic what I've eaten at restaurants or recipes I've seen online. I have a small book that came with my sushi mats, but it didn't have much info in it. This book has so much great information. I literally read it from cover to cover. I plan to use the techniques and improve my sushi!

This book is superb. I used it as a guide when I went shopping at a local Japanese market, and the people there had never even heard of it. Armed with this book, your sushi can be marvelous!

I needed to become accustomed to 19th Century writing in the beginning of the first novella but once I did, all three of them flowed. The stories were both heartbreaking and extremely "modern" classic tales of life in the English countryside; they are stories we're all familiar with, even today. If I'd had to read them when I was in high school, I'm sure I wouldn't have liked them; I certainly wouldn't have 'gotten them'.However, as an adult "of a certain age", they resonate with what life is for so many of us. Ups and downs, people and personalities we've known, tragic events, all of the disappointments we experience...they're all here and remind me that there's really nothing new under the sun. George Elliot wrote her novels with compassion and a voice that still speaks to us today.

I realize that great Victorian novels are to some degree an acquired taste. To lovers of the genre, George Eliot stands out as perhaps its finest writer. Scenes of Clerical Life does not disappoint in this regard. The book is actually three books in one, each following a different character in their spiritual growth and worldly trials. Amos Barton, Maynard Gilfil, and Janet Dempster are indelible characters who endure believable tragedies. I found the story of Janet Dempster particularly inspiring. Janet is a battered wife who becomes an alcoholic to dull the pain of her life. Through a long and detailed personal and spiritual struggle, she learns forgiveness and not incidentally overcomes her alcoholism.I highly recommend Scenes of Clerical Life.

I am a passionate George Eliot fan. I really enjoy Victorian era literature, and George Eliot is one of my favourite Victorian writers, so much so that I did my thesis for my Honours degree on three of her novels - Mill on the Floss, Daniel Deronda and Middlemarch. I found Scenes of Clerical Life to be quite different to these novels - a set of three nouvellas loosely linked rather than the complex plots of her big novels. I enjoyed the strong sense Eliot conveyed of some of the pettiness and power struggles that dominate a small village, and the many ways curates are used as pawns by various villagers. I remember being told by one of my lectures at University that one of the characteristics of Victorian Literature is that it focuses on the individual and his/her role within society, whereas modern literature tends to be solipsistic and driven by the individual desires of the central character. That is certainly the case with this book. I particularly enjoyed the first story where Eliot's marvellous descriptive powers painted a strong, clear picture of the setting and village life. It made me realise how challenging life is for clergy who are not wealthy and have the right connections.Those not used to Victorian writing may find the pace a bit slow and some of the physical descriptions long-winded, but once you get used to that style and persevere, the rewards are considerable. George Eliot uses metaphor and imagery so effectively. A delightful little gem.

I found Scenes from a Clerical Life a sad tale well told. It helped that had some background on Eliot's religious experience which explains her attitude towards Amos Barton. My copy of Scenes also contained Mr. Gilfil's Love Story, and Janet's Repentance. I thought both Gilfil and Janet were more enjoyable stories with a somewhat lighter tone. I would recommend this book to anyone who is interested in literature of this era.

I really liked the first two stories: Amos Barton & Mr. Gilfil's Love Story. The 3rd, Janet's Repentance, gets long-winded and moralistic in the second half of the story. I couldn't wait for it to end. I've read that these 3 stories are the earliest fiction George Eliot published. A good start and of course her later novels are splendid.

Read this for the language. The plots suffer from the sentimentality found in so many great 19C novels. Eliot draws you into pastoral English life and observes the scenes there with images that cannot be found in weaker fiction of the kind. There is a delightful description of vicar Barton by his fire with pipe and gin, enjoying the contrasting wet and dry. Her language here holds you, stops the reader and forces him to sigh. These stories are full of wonderful insights and descriptions, and these are what hold the reader. Of course, it should be understood that Eliot will not be read by anyone much amused by pop/tv culture. If only we could be entertained by tv we wouldn't have to put effort into our rewards.

So easy to enjoy stories by a wonderful writer as George Eliot. Not my usual genre, but so well done, so beautifully capturing a time in the past and emotions of "everyman," that I didn't want to stop reading.

To this day I remember waiting in line for some hours or more to simply walk through one of the first 747's that was on a National tour and parked on the tarmac at Greater Southwest International Airport half way between Dallas and Ft. Worth in the late 1960's. Accepting the enormity of the aircraft was somewhat difficult even when seeing it and walking through it. With it's double aisles and four distinct passenger cabin areas it's spaciousness was really overwhelming. The next versions of double aisle jet liners, the DC-10, L-1011 and B767 all were introduced some years later. The first scheduled 747 commercial flights by Pan Am to London began in the Summer of 1970. Personally my first 747 flight was on an Air France version nonstop from Chicago O'Hare to Paris de Gaulle in the mid 1970's. Since that time I have been fortunate to fly the 747 many times, but, the thrill of travel on this aircraft never became jaded. And initially the development of the 747 was almost an afterthought. When Boeing lost the competition for the design and construction of a large military transport plane to the Lockheed C5A-Galaxy, their design for that U.S. Government specification was the basis for the upper cockpit and for the lower front to back passenger cabin. The Queen reigned for more than thirty-five years before the development and entry into service of the A-380 in 2007. This book details the story of the creation of the 747.

A good easy read about Joe Sutter and the 747. I'd seen a few documentaries about the genesis of the 747 and Joe was in most of them. He lays it all out in the book and details the struggle to keep the project moving forward while fighting off upper management's cost cutting efforts, others trying to get him replaced as the lead, and trying to satisfy the customer. He was interesting to listen to as a man in his 90s when he recalled the story in the documentaries, but I can only imagine what he must have been like in his prime when doing battle in his arena. Glad to have it in my library.

.This book is authored by Joe Sutter and Jay Spenser and chronicles Sutter's life and the development of the 747 from Sutter's perspective as chief engineer. I recently watched a special on Boeing where Sutter was briefly interviewed and discussed the recent entry of the Boeing 787 into commercial service. Below are two observations and five excerpts from the book that I found valuable from a leadership perspective.ObservationsA. Sutter was a believer in simple and not afraid to try different things. It is amazing to know he cut out paper airplane engines and moved them around a line drawing of a 737 as part of the process that established engine location for the 747.B. Even at Sutter's high status and power level negative politics are a fact of life and must be dealt with. He provided examples of unwanted help he had to take, unrealistic deadlines and people trying to take over his roles and responsibilities.Excerpts from the book1. By far the biggest lesson I learned from the 737 was never to take an initial design configuration as a given. It's human nature to do just that and go charging ahead to work within an existing framework... Engineers love to dive right in and analyze the hell out of reams of data. Very often though, they can't see the forest for the trees because they haven't done the simple work up front to be sure they are starting down the right path... The more brain power you apply up front, the greater the likelihood that you'll find the design path that solves your challenges and meets your customers' requirements... If I made an individual contribution, it was my insistence that we take stock before charging out of the starting blocks.2. I let my people run with the ball and made sure to give credit where it was due. I also strove to communicate well. On the 747 program, I was the one making the decisions--I'm not a consensus guy--but I generally did so only after hearing everybody out with an open mind.3. Real leadership means having the courage to do what you know is right. (This always sounds easier than it is and Sutter provides some examples of high pressure situations where he did this)4. Joe Sutter describes the development of the Boeing 747 from his point of view as a member of the engineering and management team that made it happen. The book delves deeply into the influences that shaped the 747 to become the plane it did, such as the head of Pan American Airlines. As such, it offers interesting insights into the politics at the Boeing company, at least as seen by Mr. Sutter.Some have criticized the book as disjointed, etc. but that is a disservice to Mr. Sutter. After all, he's describing the development of the 747 from his point of view. This is not meant to be a end-all comprehensive tome that chronicles all the development stages of the plane in a manner that allows all who partook in it to have a voice (which is inherently impossible for a project of this size). Instead, it is a sampling of the engineering and political challenges that Mr. Sutter faced during his tenure with the 747, which I found incredibly interesting.The 747 was a big gamble that almost bankrupted Boeing. One of the reasons it got off the ground at all was because the decision-makers at Boeing were willing to bet the farm that this type of airplane would find broad use in a market that had yet to fully develop. From Mr. Sutters point of view, it was this bold and intuitive decision-making that put Boeing on the path to dominate its domestic and foreign rivals.I would love to see further analysis from Mr. Sutter in this area of expertise... the challenge of Embraer and Comac is looming and I wonder what he makes of the Boeing/Airbus response to a challenge to their bread and butter market.
